Baked Boursin Cheese Pasta
Tender pasta tossed with rich, melty Boursin cheese, roasted tomatoes, garlic, spices, and a shower of parmesan. This simple baked pasta delivers bold, creamy flavor in every bite — a viral favorite for a reason!
Ingredients
- (2) 5.2 ounce pkgs. Boursin Cheese (Garlic and Herb)
- (2) pints Cherry or Grape Tomatoes
- 3 to 4 Tablespoons Extra Virgin Olive Oil
- 4 Garlic Cloves (minced)
- Salt and Pepper
- 1/2 teaspoon Red Pepper Flakes
- 10 to 16 ounces Pasta *
- 1/2 cup Pasta Water (reserved from pasta)
- 1/4 cup Fresh Basil (about 6 leaves)
- 1 cup Fresh Baby Spinach, optional (chopped)
- 1/2 cup Freshly Grated Parmesan Cheese
Instructions
Preheat your oven to 375°F (190°C).
In a 9×13-inch baking dish, arrange the two rounds of Boursin cheese and cherry tomatoes. Drizzle generously with olive oil, then season with salt, pepper, minced garlic, and a pinch of red pepper flakes.
Roast in the oven for 30 to 35 minutes, until the tomatoes are blistered and the cheese is golden and melty.
Meanwhile, bring a large pot of salted water to a boil. Add your favorite pasta and cook to al dente, following the package directions.
Before draining, reserve ½ cup of the pasta water. Drain the rest.
Once the tomato and cheese mixture is done, use a spoon or fork to gently mash everything into a creamy sauce.
Add the hot pasta and reserved pasta water to the baking dish. Toss well to coat.
Finish by sprinkling over fresh basil, a handful of spinach (optional), and a generous amount of grated parmesan cheese.
Notes
Adjust the pasta amount to suit your taste: Use less pasta (around 10 oz) for a richer, creamier sauce, or more (up to 16 oz) if you’re feeding a crowd. The photos here feature 16 oz, but it’s just as delicious with less.
